

Happy Wednesday! This weekend is Easter and I have no idea what we are cooking yet. I have to speak to my mom and see what she feels like because it always ends up being a 1 hour long conversation of meal ideas back and forth until someone really puts their foot down. We always end up cooking up a storm and preparing way too much food, but it’s probably a good thing because then there are leftovers for the next few days. Can’t wait for the long weekend….good food, family and spring weather! This week has been pretty decent in terms of eating well. My gym routine has dwindled a bit but I plan to get back into it starting Monday! Somewhere in Hollywood Jillian Michael’s is cursing under her breath at me lol For breakfast this week I’ve been having vanilla greek yogurt with berries and granola. My fave!
Snack time has been juice I made using a blender! Not the best way to make juice that’s for sure but I was craving fresh juice ever since my juice cleanse and so I figured I would try it out. I threw some lemon juice, cucumber, spinach and chopped apple into the magic bullet and blended it all up. It did turn into juice but the foamy pulp gathered at the top of the glass and so I constantly had to stir it before every sip. It did cure my juice fix though and I would do it again!! I will invest in a good juicer once I do more research.
I’ve had some different lunches this week. One meal I bought from the food court was cheddar cheese perogies with broccoli and tomato salad. As you can see there is no sour cream here folks, surprisingly I am not a fan.
I also made this yummy greek quinoa salad and have been bringing it to work throughout the week.
On Sunday I had a chicken burrito bowl from Chipotle! Damn it was so good! Rice, black beans, chicken, hot salsa, cheese, lettuce, so satisfying, that place is my addiction!!
Afternoon snack time has been these amazing popcorner chips! I am obsessed with these things. They are basically popcorn in chip form and they are airy, crunchy and flavourful. They come in 4 different flavours but I’ve only tried the kettle corn and sea salt so far and both are fabulous, a must try snack if you’re a chip and popcorn lover.
Dinner tonight was pork tenderloin with garlic zucchini and steamed sweet potato! Super good. I tried a new Caribbean spice rub on the pork and it turned out fantastic, new fave recipe.
For dessert I had a few of these kinder mini eggs and a cup of tazo zen green tea!
