Happy Thursday! I am off to NYC tomorrow for a 4 day birthday celebration. I figured turning 30 was a bit of a big deal and so why not do something epic! If anyone has recommendations on great restaurants please send them my way. This past month has been so busy with work, school (started up Spanish lessons), the gym and spending time with friends that I have not had any time to make some good home cooked meals. I’ve been spending a lot of money on eating out which never is a good thing. I finally had a chance to make this quinoa stir-fry which I’ve made once before and absolutely loved it. It is a simple dish full of healthy ingredients and takes less than 30 minutes to make! Meals like this make life much easier especially when you have busy weeks ahead! Spicy Chicken and Quinoa Stir-fry
1 to 2 skinless/boneless chicken breast cut into small pieces Salt, pepper, garlic powder, cayenne pepper, paprika 1 tsp olive or canola oil 1 cup broccoli slaw (shredded broccoli and carrots) 2 to 3 green onion’s, chopped finely 1 to 1½ cup cooked quinoa 2 tbsp sirachi sauce (more if you like the heat) 2 tbsp chopped peanuts (optional) Cook quinoa according to package and set aside. Cut chicken breast into small pieces and season with salt, pepper, garlic powder, cayenne pepper and paprika. Spray a non-stick wok with cooking spray and heat over medium-high heat. Once pan is hot add the chicken pieces and brown. About 2 minutes per side. Remove from heat and set aside on a plate covered with tin foil. In the same skillet you used for the chicken, add a small amount of olive oil about 1 tsp and heat. Add the snow peas, broccoli/carrot slaw and edamame and cook for about 5 minutes or until tender-crisp. Add back in the chicken with the veggies and then add in the sesame oil, soy sauce and sirachi and stir to combine for about 30 seconds. Add in the cooked quinoa ½ a cup at the time until everything is coated nicely. You may have leftover quinoa at this point but you can always save the rest in the fridge for another recipe. Garnish stir-fry with chopped peanuts and green onions!
