
Today I was not in the mood at all to make dinner. I thought about the cheapest and easiest thing to make and came up with a healthy little quinoa stir-fry. The only thing I had to purchase was a roasted chicken breast from the hot counter of Loblaws for only $3.99. It was a HUGE breast and I still have half of it leftover to use tomorrow in another recipe. I had made quinoa the night before so I also had a little over 1/2 cup in the fridge. I gathered some veggies and spices and made this meal in less than 10 minutes!

Chicken & Quinoa Stir-Fry
(2 servings)
Ingredients:
- 3/4 cup cooked quinoa
- half of a red onion (chopped)
- half of a red pepper (chopped)
- 5 large white mushrooms (chopped)
- 2 garlic cloves minced
- 1 tbsp olive oil
- 1/2 of a rotisserie chicken breast shredded OR your own cooked chicken breast cut into pieces
- 1/2 tsp cumin
- 1/2 tsp ancho chili powder
- dash of tabasco sauce (or more depending if you like the spice…I DO) (optional)
- salt and pepper
1. Heat olive oil in a pan over medium heat 2. Sautee onions and garlic for 2 to 3 minutes or until soft 3. Add the rest of the vegetables and cook until soft (not too soft or it will go mushy, i like mine a bit crunchy) 4. Add in the quinoa and toss for a few minutes 5. Add in the shredded chicken, cumin, chili powder, salt, pepper and tabasco (optional) 6. Combine all ingredients for a couple of minutes until heated through Share on Facebook
