It’s Thursday and Spring is finally here! This week has been quite cold for the beginning of April but we have some double-digit weather next week so I’m really looking forward to that. It has been one long and cold winter and I’m ready for the fresh spring air, my favourite season! I am also looking forward to the warmer weather because I’ll be travelling to Europe for 2 weeks in May! I’m quite the avid traveler and so when the opportunity came up for me to visit Norway, Sweden and Denmark with my sister and her best friend, I jumped on it immediately! I have been to Europe a few times but have never visited Scandinavia. I am extremely excited to explore the history and breathtaking scenery the countries have to offer and of course indulge in Scandinavian cuisine! I’ll be sure to take a lot of pictures to share with you all. Today was one of those days where I couldn’t shake the hungry feeling. Even after a big dinner I was snooping through the kitchen looking for snacks. I saw that I had a few overripe bananas and started thinking of all the possible things I could make with them. I wanted something very quick so muffins and bread were out of the question. I ended up making my own little creation and I must say it really hit the spot. Not only was it super quick to make, but it’s quite healthy as well making it an ideal dessert recipe if you’re craving for something sweet. Feel free to get creative with this recipe and add in all sorts of toppings of your choice! Coconut Crusted Bananas with 1 banana, sliced in half length-wise and then quartered 3 tablespoons shredded unsweetened coconut 2 tbsp chopped pecans, toasted 2 tbsp melted dark chocolate Dollop of vanilla or plain greek yogurt Cinnamon (as much as you like) Heat coconut oil in a skillet over medium heat and add banana slices. Let cook until slightly brown then add shredded coconut on the slices. Brown the bananas on all sides. Remove from skillet and add a dollop of Greek yogurt, drizzle with melted dark chocolate, sprinkle with cinnamon, pecans, pinch of salt, and serve warm!
