
Yesterday I had such a hankering for coconut macaroons! Once the thought was in my head I just had to make them. Luckily I found a quick and healthy recipe online at tasteofhome and whipped these up in less than 5 minutes. The original recipe calls for white sugar and sweetened coconut flakes but I used coconut palm sugar and unsweetened coconut flakes instead, its up to you! These took only 18 minutes to bake and I didn’t even wait for them to cool down before popping 2 in my mouth. They really hit the spot and actually tasted quite good for a healthy version. I will admit though that nothing can beat a chewy condensed milk macaroon but I usually will make those ones for a special occasion.

- 1 1/3 cup unsweetened shredded coconut
- 1/3 cup coconut palm sugar
- 2 tbsp all-purpose flour
- 1/8 tsp sea salt
- 2 egg whites
- ½ tsp vanilla extract
1. In a small bowl, combine the coconut, sugar, flour and salt. Stir in egg whites and vanilla; mix well. 2. Drop by rounded tablespoons onto greased baking sheets. Bake at 325° for 18-20 minutes or until golden brown. Cool on a wire rack. Makes about 12 to 15 macaroons.
