Made this delicious pasta dish for dinner tonight! 150 grams of diced Italian Pancetta
1/2 white onion, diced 4 cloves of garlic, minced 1 package sliced white mushrooms 1/2 tsp red pepper flakes (or less if you’re not down with the spice)
1 tbsp sugar sea salt, black pepper, dried basil (a dash of each will do, but depending on your taste add more or less)
freshly grated parmesan cheese (I only had the gross Kraft stuff on hand) Saute pancetta with olive oil in a large pot over medium heat (7 mins)
Add onions, garlic, and red pepper flakes and saute for another 5 minutes
Add in tomatoes, mushrooms, salt, pepper, basil and bring to a boil 
Turn the heat to medium-low and simmer for about 35 minutes At about the 15 minutes mark, add in the sugar and stir
Taste sauce and add more salt, pepper, basil, sugar for your desired taste.
